KINGSBURG – Restaurateur Jose Almanza is hoping that quality food, good customer service and cleanliness will pay off as he officially opens his new business venture, BLD Fresh, in Kingsburg. Almanza has put his son, Brian Almanza, in charge of the kitchen and is banking on his nearly 30 years of experience to help make the newest restaurant in town a success.

BLD serves such breakfast items as breakfast plates, breakfast burritos, omelets and griddle combos. Lunch items include burgers, salads, sandwiches, melts, soups and wraps. Dinner items include chicken strips, fish and chips, a shrimp basket and a fish sandwich. There’s a kids’ menu and a variety of sides.

We asked Almanza some questions for Q & A and here are his replies:

Name of the business: BLD Fresh, which stands for breakfast, lunch and dinner.

Hours of operation: 6 a.m. to 10 p.m. Monday to Thursday; 6 a.m. to 11 p.m. Friday and Saturday; 7 a.m. to 10 p.m. Sundays.

What is your professional background? Since 1989, I’ve worked in all the positions, from being the prep cook to cook and manager and then as a trainer. I used to train the staff when the franchisee would open a new store. I’d hire the employees and train them for a month until the operation was smooth and everything was in place. I’ve decided to go on my own. BLD is basically what we sell, breakfast, lunch and dinner. I tried to make it briefer and that’s how I came up with the name.

When did the business open?: Thursday, Dec. 28

What do you specialize in?: We serve everything on the menu all day.

Why did you decide to open in Kingsburg?: I was looking for a new place to locate my restaurant. I went to different towns but when I saw this location, I liked that it was a small, clean town with friendly people. And this is a good location so I decided to locate here.

Any statement you’d like to make to your customers?: I’d like to invite them to come and taste our food. Everything’s fresh and we make chili fresh every day. Everything’s made to order so it makes a difference. We don’t start the order until a customer orders a meal.

I pay a little bit more for the food items but I’m strict about giving my customers very good quality items. I’m not afraid to compete since I know the quality of the foods that I buy and also I’m very focused on the cleanliness of my restaurant.

I also want to make sure every customer gets the right service. Come and give us a try. When you come for the first time, you’ll want to come back. [Customers] like the burgers very much. We’ve been getting good reviews and I’m happy for that. We’ve been busy every day since we’ve been opened. We’d like to grow and eventually add another location.
